Organic wheat farmer Bob Quinn says gluten allergies should not be blamed on all wheat but rather on the varieties and processes that make up modern conventional wheat farming. Quinn wrote a book called “Grain By Grain” detailing his conversion from chemical to organic farming and the research he’s done on wheat that doesn’t cause allergic reactions and, in fact, creates positive health outcomes. Quinn grows a grain called KAMUT, an ancient grain that is packed with protein and B vitamins, which is sometimes called the great great grandfather of grains.
